- 1 cup raw pumpkin seeds
- 3 tablespoons local honey
- 1 tablespoon brown sugar
- 2 tablespoons olive or coconut oil
- 1 teaspoon flaky sea salt, divided
- Optional: 1/2 teaspoon chili powder, 1/2 teaspoon garlic powder
Instructions
- Preheat your oven to 350 degrees F (175 degrees C).
- Line a rimmed baking sheet with parchment paper, or lightly grease it with oil.
- In a large bowl, combine the pumpkin seeds, honey, brown sugar, oil, half of the salt, and optional spices. Stir well to ensure every seed is coated.
- Spread out the coated seeds in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 15-20 minutes, or until golden brown, stirring every 5-10 minutes.
- Remove from the oven, sprinkle with the remaining salt, and let cool completely before serving.
Notes
- To prevent the honey from burning, you can add it halfway through the roasting process.
- Adjust the roasting time if using store-bought raw pumpkin seeds, as they may be drier than fresh seeds.
