Ingredients

  • 3 tablespoons local honey
  • 1 tablespoon brown sugar
  • 2 tablespoons olive or coconut oil
  • 1 teaspoon flaky sea salt, divided
  • Optional: 1/2 teaspoon chili powder, 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Line a rimmed baking sheet with parchment paper, or lightly grease it with oil.
  3. In a large bowl, combine the pumpkin seeds, honey, brown sugar, oil, half of the salt, and optional spices. Stir well to ensure every seed is coated.
  4. Spread out the coated seeds in a single layer on the prepared baking sheet.
  5. Roast in the preheated oven for 15-20 minutes, or until golden brown, stirring every 5-10 minutes.
  6. Remove from the oven, sprinkle with the remaining salt, and let cool completely before serving.

Notes

  • To prevent the honey from burning, you can add it halfway through the roasting process.
  • Adjust the roasting time if using store-bought raw pumpkin seeds, as they may be drier than fresh seeds.
