Ingredients

  • 1 lb raw shelled peanuts
  • 1 tablespoon olive oil
  • Salt to taste (optional)
  • Additional seasonings of your choice (optional, like chili powder, garlic powder, etc.)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, toss the peanuts with the olive oil until they’re evenly coated.
  3. Spread the peanuts out in a single layer on a baking sheet.
  4. Roast in the preheated oven for 20-25 minutes, stirring occasionally to ensure they roast evenly.
  5. Remove from the oven and immediately sprinkle with salt and any other seasonings you’d like, while they’re still hot.
  6. Allow the peanuts to cool completely before storing in an airtight container.

Notes

  • Be careful not to over-roast the peanuts as they can easily burn.
  • The peanuts will continue to cook a little after being removed from the oven due to the residual heat, so you may want to pull them out when they’re slightly underdone.
