- 1 pound roast beef, thinly sliced
- 1 loaf of Caribbean hard dough bread (or substitute with French bread)
- 2 tablespoons olive oil
- 1 large red onion, thinly sliced
- 2 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1/2 cup shredded lettuce
- 1 large tomato, sliced
- 1/2 cup spicy mayonnaise
- 1 tablespoon jerk seasoning
- Salt and pepper to taste
- 1/2 cup pineapple slices (optional)
- 2 tablespoons of butter
Instructions
- Start by heating olive oil in a large skillet over medium heat. Add the onions, garlic, bell peppers, jerk seasoning, salt, and pepper. Cook until the vegetables are soft and the onions are caramelized.
- While the vegetables are cooking, spread butter on both sides of your bread slices and toast them in the oven at 350°F until they’re golden brown.
- Spread the spicy mayonnaise on the toasted bread slices.
- Once the vegetables are cooked, begin layering your sandwich. Start with the roast beef, followed by the cooked vegetables, pineapple slices (if using), tomato slices, and shredded lettuce.
- Top with another slice of toasted bread, cut the sandwich in half if desired, and serve immediately.
Notes
- If you can’t find Caribbean hard dough bread, substitute with a hearty French or Italian bread.
- To make spicy mayo, combine mayonnaise with your choice of hot sauce, adjusting the heat to your liking.
- Feel free to add or subtract ingredients based on your preferences. Other great additions might include cheese, pickles, or other favorite sandwich toppings.
