- 2 cans (15 oz each) whole or sliced beets, drained
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon balsamic vinegar (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a large mixing bowl, combine drained beets, olive oil, dried thyme, salt, and black pepper. Toss to coat the beets evenly.
- Spread the beets in a single layer on a lined baking sheet.
- Roast the beets for 20-25 minutes, stirring occasionally, until they are tender and slightly caramelized.
- Remove the beets from the oven and drizzle with balsamic vinegar if desired. Serve immediately.
Notes
- You can also use fresh beets, but they will need to be peeled, cooked, and sliced before roasting.
- Feel free to add other herbs and spices to suit your taste preferences.
