- 1 Spoon Roast (approx. 4 lbs)
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme, finely chopped
Instructions
- Preheat the oven to 275°F (135°C).
- Season the roast with salt and pepper on all sides.
- Heat the olive oil in a large skillet over medium-high heat. Add the roast and sear on all sides until browned, about 3-4 minutes per side.
- Transfer the roast to a roasting pan. Sprinkle the minced garlic, rosemary, and thyme evenly over the top.
- Cover the roasting pan with aluminum foil and place in the preheated oven.
- Roast for approximately 1 hour and 30 minutes, or until a meat thermometer inserted into the thickest part of the roast reads 130°F for medium-rare.
- Remove the roast from the oven and let rest for at least 10 minutes before slicing to allow the juices to redistribute.
Notes
- Marinating the roast overnight with your preferred marinade will further enhance the flavor.
- The cooking time will vary depending on the size of your roast and your preferred level of doneness.
