  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced

  • 1 tablespoon fresh thyme, finely chopped

Instructions

  1. Preheat the oven to 275°F (135°C).
  2. Season the roast with salt and pepper on all sides.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the roast and sear on all sides until browned, about 3-4 minutes per side.
  4. Transfer the roast to a roasting pan. Sprinkle the minced garlic, rosemary, and thyme evenly over the top.
  5. Cover the roasting pan with aluminum foil and place in the preheated oven.
  6. Roast for approximately 1 hour and 30 minutes, or until a meat thermometer inserted into the thickest part of the roast reads 130°F for medium-rare.
