Elevate your regular grilled cheese with a spicy twist. This Roasted Jalapeno Popper Grilled Cheese is a fusion of two comfort food classics, with a kick of heat from roasted jalapenos and a luscious blend of cheeses.

Ingredients

  • 4 jalapenos
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 8 slices of your favorite bread
  • Butter, as needed

Instructions

  1. Preheat your oven to 400°F (200°C). Place the jalapenos on a baking sheet and roast for about 15-20 minutes, until they are charred and softened.
  2. Allow the jalapenos to cool, then chop them finely.
  3. In a bowl, combine the cream cheese, shredded cheddar, chopped jalapenos, garlic powder, and onion powder.
  4. Butter one side of each bread slice. Spread a generous amount of the cheese and jalapeno mixture on the non-buttered side of 4 slices, then top with the remaining slices, buttered side up.
  5. Heat a skillet over medium heat. Cook each sandwich until golden brown on both sides and the cheese is melted, about 3-4 minutes per side.

  • Adjust the amount of jalapenos to your preferred spice level.
  • You can use any type of bread, but a sturdy one like sourdough holds up best.
