Ingredients

  • 1 ripe pineapple
  • 3 fresh habanero peppers
  • 1/4 cup of vinegar
  • 1/2 teaspoon of salt

Instructions

  1. Preheat your oven to 425°F.
  2. Peel and core the pineapple, then cut it into chunks.
  3. Cut off the stems of the habanero peppers and slice them in half.
  4. Arrange the pineapple chunks and habanero halves on a baking sheet.
  5. Roast them in the oven for about 15-20 minutes, or until they’re nicely charred.
  6. Allow the roasted pineapple and habaneros to cool, then put them in a blender.
  7. Add the vinegar and salt, and blend until smooth.
  8. Taste the sauce and adjust the seasoning if needed.

Notes

  • If the sauce is too spicy, add more pineapple.
  • If it’s too sweet, add another habanero or more vinegar.
