- 10 lbs waxy potatoes, peeled and cubed
- 3 cups mayonnaise
- 1/4 cup mustard
- Salt and pepper to taste
- 2 cups celery, diced
- 1 large onion, finely chopped
- 8 hard-boiled eggs, chopped
- 1 tbsp vinegar or lemon juice
- Fresh herbs for garnish (optional)
Instructions
- Boil potatoes until tender, drain, and cool.
- In a bowl, mix mayonnaise, mustard, salt, pepper, and vinegar or lemon juice.
- In a large bowl, combine potatoes, celery, onion, and eggs. Toss gently with dressing.
- Chill in the refrigerator for at least 2 hours before serving.
