- 2 cups finely chopped cucumbers
- 1 cup finely chopped onions
- 1/2 cup finely chopped bell peppers (green or red)
- 1 cup apple cider vinegar
- 3/4 cup sugar
- 1 teaspoon salt
- 1 teaspoon celery seeds
- 1 teaspoon mustard seeds
Instructions
- Combine all ingredients in a non-stick saucepan.
- Bring to a boil over medium heat, then reduce to a simmer.
- Simmer for 10 minutes, stirring occasionally.
- Remove from heat and allow to cool.
- Transfer the relish to sterilized mason jars and seal.
Notes
Adjust sugar and vinegar to taste for a sweeter or tangier relish.
