- 1 pound fresh Brussels sprouts, trimmed and halved
- 2 tablespoons extra virgin olive oil
- 2 cloves garlic, minced
- Juice of 1 lime
- 1/4 cup pineapple juice
- 1/4 cup unsweetened coconut flakes
- 1 teaspoon freshly grated ginger
- 1/2 teaspoon ground allspice
- A pinch of red pepper flakes
- Salt and black pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine Brussels sprouts with olive oil, garlic, lime juice, pineapple juice, ginger, allspice, and red pepper flakes. Toss to coat evenly.
- Spread the sprouts on a baking sheet in a single layer.
- Roast for 20-25 minutes, stirring halfway, until caramelized and tender.
- Remove from the oven and sprinkle with coconut flakes.
Notes
- Adjust the amount of red pepper flakes to suit your heat preference.
- For a vegan version, ensure all ingredients are plant-based.
