- 3–4 lb cross rib roast
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 1–2 cups beef broth
- Fresh rosemary or thyme (optional)
Instructions
- Preheat the oven to 325°F (163°C).
- Season the roast with salt, pepper, and herbs.
- Heat olive oil in a Dutch oven over medium-high heat. Sear the roast on all sides.
- Add onions, garlic, and carrots around the roast. Pour in beef broth.
- Cover and cook in the oven for 3-4 hours, until the roast is tender.
- Let rest for 10 minutes before slicing.
